Parmesan Fish Barefoot Contessa Style

My aunt asked me about this recipe before and insisted that I already knew about it.. I did not and once I got home that night I had to make it. I have followed this for chicken but this week I decided to use tilapia after a friend suggested it and we both agreed it’s better than the chicken! If you’re looking for an easy yet tasty meal follow Ina Garten’s recipe. It is a very simple recipe to follow and I highly suggest it!

I bought Tilapia because I knew it would pair well with arugula and parmesan..

Tilapia

Flat out

Anger management comes in play here.. flatten out the fish (or chicken) with a meat mallet or rolling pin.. honest it helps after a long work day! :)

3 plates prepared (avoid the mess!)

Step one in flour

Step two in eggs

Step 3 in panko and parmesan

I prefer to use Panko instead of bread crumbs- they are lighter plus provide a nice crunch!

Into the pan you go..

Flipped over and yummy golden goodness

Mix ingredients to make lemon vinaigrette (plus my moral support helper aka Frisbee)

shake shake and done (again Frisbee stealing the camera shot)

p.s. That was the first time I ever made my own dressing before. Who KNEW it was SO easy?!

I also drizzled some of the dressing on the fish too. Quite yummy..

Still worked out~yum!

It may look like a lot of steps but it really wasn’t. This meal will definitely be worked into my go-to list.
