I have followed this for chicken but this week I decided to use tilapia after a friend suggested it and we both agreed it’s better than the chicken! I bought Tilapia because I knew it would pair well with arugula and parmesan..

Anger management comes in play here.. flatten out the fish (or chicken) with a meat mallet or rolling pin.. honest it helps after a long work day! ![]()
I prefer to use Panko instead of bread crumbs- they are lighter plus provide a nice crunch!
p.s. That was the first time I ever made my own dressing before. Who KNEW it was SO easy?!
I also drizzled some of the dressing on the fish too. Quite yummy..

It may look like a lot of steps but it really wasn’t. This meal will definitely be worked into my go-to list.
